Bio:
I am biology major, who took some marine biology introductory courses I was the owner/chef de cuisine of a Spanish fusion restaurant in Egypt that encompassed a diverse array of dishes, which included soups, tapas, pastas, different sorts of paellas and main dishes. All of the dishes had a twist of Spanish and Arabic flavours, hence the term Spanish fusion. We were the first Spanish restaurant to open here in Egypt and the concept of Spanish food, which I came up with, was extremely new to our society. The restaurant opened in October 2013 and we helped built it and set it up from scratch. As the chef de cuisine I have also created the menu and the recipes so I have experience with the design and implementation of menus, staff and kitchen management and managing financial budgets, food and labour costs in Egypt. I have also managed the operational part of the restaurant with the aid of one of my partners. I did a leadership development training, specifically in F&B, at the Waldorf Astoria Palm Jumeirah in Dubai, a luxury brand of Hilton, which has familiarized me with personalized and customer tailored service. Part of the training took place in an outlet called Social , a contemporary italian cuisine by Heinz Beck, a 3 Michelin Star Chef, however I have done a rotation through 6 different outlets with different concepts including in-room dinning and banqueting. My educational background is completely different of my current work, as I was a molecular biologist with an MSc in the field of cancer therapeutics; however, my passion for cooking and food as well as my confidence encouraged me to change my career paths into the restaurant business. I have also used the fact of being in the field of cancer research to apply healthy cooking techniques as much as possible
